QUESTION: using my modified Melitta Clarity, I have been trying to use the Coffee
Brewing Control Chart by Specialty Coffee with some success but if I am
tasting things correctly by using the same roasted beans but with different
amounts of coffee and water, I get different results.
For example, using 55gm of coffee with 1 liter of water does not taste the
same as 27.5gm of coffee with 1/2 liter of water. I think that maybe the
taste is different because the coffee is being brewed longer with the larger
amount of water.
anyone here have the same experience?
is there a corresponding chart which shows the appropriate amount of coffee
to be used as the amount of water is decreased from 1 liter?
ANSWER: the magic number is about 1 part coffee to 17 parts water.
the scaa standard way to do this is to multiply your amount of water by 0.057.
for example, if you want to use, oh say, 18 oz water, then 18 oz x 0.057 = 1.026 oz. coffee. 12oz water x 0.057 = .684 oz coffee. most kitchen
scales aren't that accurate, so convert the result into grams: in the
first example, about 29 grams and the second, 19 grams.
of course, from there you may refine for your own personal taste but
this should put you in the ballpark and eliminate a lot of guesswork.
thank goodness you only have to do this math once! after you've
seen the amount you can usually eyeball it accurately for then on.
i always use this magic number when making drip for guests and everyone
remarks how great the coffee is (or maybe they just like the gillies
carioca! )
